What's this all about?

We love whole grains! We have found that we prefer their flavor. They are also far healthier than the refined foods which characterize the typical modern diet.

Switching to whole grains helps maintain a low glycemic diet. That means you will have more sustainable energy levels throughout the day, and probably fewer problems with weight control.

We created this website with one goal: to build an online community of like-minded people who either share our enthusiasm about whole grains or just want to learn more about them.

They are so yummy!

 

Honey Bunches

Ingredients:

  • 3 cups quick oats
  • 1/2 cups white whole wheat flour
  • 1/2 cups finely ground flaxseed
  • 1 cup coconut (shredded or flaked)
  • 1 cup walnuts or pecans (chopped)
  • 1 1/2 cups brown sugar
  • 1/3 cup honey or molasses
  • 1 cup butter

Preparation:

  1. Preheat oven to 325
  2. Combine oats, flour, flaxseed, coconut and nuts in a large bowl.
  3. Melt butter, sugar and honey in saucepan over low heat.
  4. Add melted butter mixture to dry ingredients.
  5. Fill mini muffin tins 3/4 full.
  6. Bake 9-12 minutes, until browned and chewy.

Notes:

You can use a regular size muffin tin...increase heat to 350 and bake 10-15min. If baked too long (for small or regular tin) may be microwaved briefly to soften prior to serving. Store in air tight container. Freezes well.

I made these last night and they're really easy and incredibly tasty. They'd be a great starter for people who are reluctant to try whole grain desserts. They're moist, chewy, sweet, and crumbly. In fact, I have a huge sweet tooth, and even I think you could cut down on the sugar quite a bit. I added a little vanilla and cinnamon and thought of adding some salt too late. In my oven they could go a few minutes longer than the recommended time. They need to cool to not fall apart. There's so little flour in there, I wonder if it would hurt to substitute a rice or nut flour? They're on their way to being a really healthy treat, so I'll probably play with the recipe to see if I can make them even more so without losing their tastiness.
