We love whole grains! We have found that we prefer their flavor. They are also far healthier than the refined foods which characterize the typical modern diet.

Switching to whole grains helps maintain a low glycemic diet. That means you will have more sustainable energy levels throughout the day, and probably fewer problems with weight control.

We created this website with one goal: to build an online community of like-minded people who either share our enthusiasm about whole grains or just want to learn more about them.

Qunioa Chicken Chili

This recipe has been a favorite in our family for some time now. The preparation is quite simple, the result delicious. It is loaded with flavor. We like it served over Brazilian brown rice. It is hearty and healthy and oh so satisfying. We find ourselves calling for it over and over again.

We use canned beans (low sodium) for this one because it allows us to make it without any real advanced preparation or planning. We just keep a few cans of white beans in the pantry until the craving sets in. Think of it as a delicious whole grain fast food.

Quinoa Chicken Chili

Ingredients:

  • 1 Tbsp olive oil
  • 3 chicken breasts or 12 tenderloins
  • 1/2 cup chopped onion
  • 3 cups chicken broth
  • 2 (4 ounce) cans chopped green chilis
  • 3 (15 ounce) cans white beans (un-drained)
  • 1/2 cup quinoa, rinsed well

Spice Blend

  • 1 Tbsp garlic, minced
  • 2 tsp cumin powder
  • 1/8 tsp ground red pepper (or to taste)
  • 1 tsp dried oregano
  • 2 or 3 leeks chopped (white only)
  • 1/2 bunch fresh cilantro, chopped
  • 4 green onions, chopped

Preparation:

  1. Heat the olive oil in a large pot. Add the onions and chicken sautéing until the chicken browns.
  2. Stir in the broth, green chilis, and spice blend.
  3. Simmer for 15-20 minutes
  4. Stir in the white beans and quinoa. Simmer an additional 15 minutes.

Just tried it, and it was great! I couldn't find the chopped green chili though, even in the Goya section of the store... wonder what it would look like. I used a few serrano peppers instead. Next time I'll use low salt chicken broth instead. It was a little salty. I'm adding this one to the recipe box. :-)
