We love whole grains! We have found that we prefer their flavor. They are also far healthier than the refined foods which characterize the typical modern diet.

Switching to whole grains helps maintain a low glycemic diet. That means you will have more sustainable energy levels throughout the day, and probably fewer problems with weight control.

We created this website with one goal: to build an online community of like-minded people who either share our enthusiasm about whole grains or just want to learn more about them.

Low Fat Truffle

Pay close attention: I am sharing one of my most delicious secret recipes! These truffles are so good and, believe it or not, low in fat. Not your usual fat-laden truffles at all. The best part: they are as rich and creamy as any others you have tasted. These truffles are not missing anything in terms of flavor. The fat content will depend on the chocolate that you use since that’s the only source of fat in the recipe. With my chocolate of choice, each truffle came out to only 2.5 grams of fat. Woo hoo! Make some for your sweetie for Valentine’s Day. Or if ya don’t have a sweetie, just make ’em for yourself.

Here’s a poem to accompany your gift of truffles, if it suits your fancy. (Talk about a full service site!) All things French were brought to mind recently by my friend Pat’s stay in Paris (sigh). I became acquainted with this poem during my college French language courses. “Allons-y! Le Français Par étapes” anyone?

Low fat Chocolate Truffles

Ingredients :

  • 6 ounces chocolate (equals 1 cup if using chips), finely chopped (use your favorite, I used 54% dark chocolate)
  • 1/3 cup evaporated skim milk
  • 3 tablespoons liqueur (use your favorite, I used port wine)
  • 2 tablespoons crispy brown rice cereal, lightly toasted
  • 1/2 cup dried fruit (I used dried tart Montmorency cherries)
  • 1/4 cup unsweetened cocoa powder (Valrhona brand) or finely chopped, toasted nuts
  • 25 whole hazelnuts, toasted (optional)
Note: If you want to make your truffles extra delicious, put a toasted hazelnut in the middle of each truffle. Finely chopped, toasted nuts can also be substituted for the brown rice cereal above. Keep in mind, if you add nuts, you are adding fat… but nuts are good for you!

Preparation:

  1. Place the finely chopped chocolate in a heat-proof bowl and set aside.
  2. Heat the evaporated milk and port wine in a pan over medium heat until simmering.
  3. Pour the hot milk mixture evenly over the chocolate. Allow it to stand for 5 minutes to melt the chocolate.
  4. After 5 minutes, stir until the chocolate is completely melted.
  5. Stir the dried cherries into the chocolate.
  6. Wait until the chocolate is cool to the touch and gently stir in the brown rice cereal.
  7. Cover the chocolate and refrigerate for 4 hours or overnight until firm.
  8. To shape truffles, scoop out a rounded teaspoon of the firm chocolate and roll into balls.
  9. Insert a hazelnut into the middle of each truffle, if using.
  10. Next, roll truffles in unsweetened cocoa powder or chopped nuts to coat.
  11. Store the truffles in an airtight container in the refrigerator until ready to serve.
  12. Place in size 4 paper candy cups before serving.

*Makes 25 low fat chocolate truffles. Keeps in the refrigerator for one week.
