What’s this all about?

We love whole grains! We have found that we prefer their flavor. They are also far healthier than the refined foods which characterize the typical modern diet.

Switching to whole grains helps maintain a low glycemic diet. That means you will have more sustainable energy levels throughout the day, and probably fewer problems with weight control.

We created this website with one goal: to build an online community of like-minded people who either share our enthusiasm about whole grains or just want to learn more about them.

Fretting over what to do with all that leftover turkey? Look no further than this delicious turkey salad sandwich, bursting with flavor. I look forward to turkey leftovers just so I can make this. It’s delicious served on whole grain bread as either a closed or open-faced sandwich. It makes great little appetizers too! If serving as appetizers, add some freshly chopped parsley and a slice of grape on top for a lovely presentation.

 

Turkey and Blue Cheese Salad Sandwich

Ingredients:

  • 12 ounces leftover turkey, chopped
  • 1/2 cup blue cheese, crumbled
  • 1/2 cup light mayonnaise
  • 1/2 cup celery, diced
  • 1/2 cup red grapes, sliced into quarters
  • 1/4 cup red onion, diced
  • 1/4 cup pecans, toasted and chopped
  • 3 tablespoons parsley, chopped
  • Sea salt and freshly ground black pepper to taste
  • A fresh loaf of rustic whole grain bread, thinly sliced

Preparation:

  1. Mix prepared ingredients in a bowl.
  2. Cover and chill in the refrigerator.
  3. Serve over thinly sliced whole grain bread.
