What a delicious treat to celebrate spring and Easter time! These are so easy to make and a great activity for the kids. In no time at all, you are rewarded with a beautiful and yummy dessert. The fiber cereal in my recipe is also a healthy and tasty update to the fried noodles that have been traditionally used. I look forward to this time of year so I can make this recipe!

Pay close attention: I am sharing one of my most delicious secret recipes! These truffles are so good and, believe it or not, low in fat. Not your usual fat-laden truffles at all. The best part: they are as rich and creamy as any others you have tasted. These truffles are not missing anything in terms of flavor. The fat content will depend on the chocolate that you use since that’s the only source of fat in the recipe. With my chocolate of choice, each truffle came out to only 2.5 grams of fat. Woo hoo! Make some for your sweetie for Valentine’s Day. Or if ya don’t have a sweetie, just make ’em for yourself.

Everyone in our family loves rice crispy treats! What’s not to love, right? I’ve been looking for an alternative to marshmallows for as long as I can remember. Not only because the corn syrup in marshmallows sends my daughter bouncing all over the room, but traditional marshmallows also contain food coloring!!! Hard to believe that something white has food coloring, but yes, marshmallows contain the artificial food dye Blue 1.**

The nice weather that we had on the East Coast for TWO days had me daydreaming about our time in Hawaii and the best lemon bars ever from a little bakery in Honolulu. I was so inspired I came up with my own lemon bar recipe and, I must say, these bars are fabulously good!!!! The shortbread crust and the zesty lemon filling combine to create an addictive treat. WARNING: The entire pan was gone in half an hour. We could not eat just one.

Chocolate with at least 60% cocoa has become one of our staple grocery items. I eat a little every day. Often it’s just a few chips right out of the bag. Because of its antioxidant properties it is actually good for you, sugar content aside. Fortunately, dark chocolate is relatively low in sugar. There are days when I crave something more than pure chocolate as a snack, but I don’t have the time to bake up a favorite treat. On those days, I’m so grateful that I discovered this little gem.
